Well, here we are, at the week of the football grand final. I don’t even really follow football myself, but I must say, I did feel a little sad that Collingwood got pipped by one point on the weekend. My beautiful 101-year-old Nana is a very passionate ‘Pies’ supporter (don’t hold that against her). I would have loved them to have got into the Grand Final, namely for her & how delighted it would have made her. I think part of the reason I don’t follow footy is the conversations scare me a little. I mean, just writing here that I would have liked Collingwood to get up makes me fear for my life. 

So, I am moving on to food. It’s my safe place and my happy place. Let’s go there, shall we?

These Chicken and halloumi sausages are a kind-of cheats sausage. Perhaps they should be named Chicken and halloumi parcels instead. Either way, they are absolutely delicious. These Chicken and halloumi sausages can be served as a main meal with a beautiful salad or steamed greens. I love them also with healthy cooked grains. I am sharing these with you this week, however, as they will make for excellent ‘footy food’ to enjoy this weekend.

I cook these on the barbecue, but they can also be cooked in a frying pan with great success.

Serve them with great relish or sauce.

Equipment

  • 1 Cooking bowl
  • 1 Barbecue or frying pan

Ingredients

  • 500 g chicken mince
  • 100 g grated haloumi
  • 2 tablespoons flat-leaf parsley or sage
  • 1 egg
  • 50 g dried breadcrumbs or panko crumbs use gluten-free breadcrumbs if required
  • 8 slices of prosciutto or Spanish Jamon

Instructions

  • Place chicken mince in a bowl. Add the grated halloumi, chopped herbs, egg and dried breadcrumbs. Season with salt and freshly ground black pepper.
  • Mix, to combine.
  • Shape & make into 8 sausage shapes.
  • Wrap each sausage with a prosciutto slice.
  • Heat the barbecue grill until hot. Cook the sausages for 4–5 minutes on each side and serve.
  • Serve with Relish Mama tomato relish or Relish Mama beetroot & balsamic relish.

Notes

If you don't have a barbecue, these can be cooked in a frying pan with great success.
