Hazelnut and chocolate friands

 

Mother’s Day is almost here. All hail the women who made us who we are today! Not to mention the supporting cast: We’re talking Grandmothers, Aunts, Step-mums, girlfriends, Dads who are both the Dad and the Mum in their house. Raising a human is a team effort, after all.

We have a lovely hazelnut and chocolate friand recipe for you here that you can ‘whip up’ for the special lady in your life this Mothers day. Let her enjoy it in bed with a cup of tea and her favourite book or mag or as part of your lunch or dinner menu. They are super lovely and we think she’ll be delighted you made them with so-much-love.

Chocolate and hazelnut friands 
(from the new Relish Mama cookbook – Family)
Makes 12

6 egg whites
185 g butter, melted and cooled
125 g hazelnut meal (ground hazelnuts)
240 g icing sugar, sifted, plus extra for dusting
75 g plain flour, sifted (can substitute for gluten-free flour)
100 g dark chocolate, coarsely chopped
35 g roasted hazelnuts, coarsely chopped

Preheat oven to 160°C fan forced or 190°C

Grease a 12 x ½ cup friand pans. Stand this on an oven tray.

Place egg whites in a bowl and whisk vigorously. Whisk in butter, hazelnut meal and sifted icing sugar and flour. Fold in the chocolate.

Spoon the mixture into pans and sprinkle with nuts. Bake for approximately 20 minutes.

Leave friands in the pan for 10 minutes before turning out onto a wire rack to cool.

Dust with icing sugar and serve.

Hot tip 
Friands are best kept at room temperature in an airtight container but you can also freeze them for up to 3 months.
