Super easy Tomato and Onion salad
This recipe almost doesn’t warrant a recipe, but so often, these are the best kind.
Simple is best. Here goes.
Slice a red onion.
If you would like to take some of the ‘kick’ out of the red onion, pour a little boiling water over the top of it and allow it to sit for five or ten minutes. Strain the onions and place in a bowl with a little sea salt and the juice of a lemon. Give it a gentle mix.
Slice tomatoes and place on a platter. Add some cherry tomatoes (only if you fancy).
Scatter the red onion slices around and on the tomatoes.
Add a little more lemon juice if desired.
Add a gentle sprinkle of sea salt and some freshly cracked black pepper.
Be generous with the extra virgin olive oil. I always use Cobram Estate (the best)
Finish with some red wine vinegar or sherry vinegar.
Finish with some fresh and chopped herbs such as Italian parsley, oregano or dill.
To fancy things up in Summer, you could top with good quality burrata or top generously with Meredith dairy goat’s cheese or some feta.
So damn good.
