Salted Almonds

Have you ever sat at the bar at MoVida and sampled their very Moorish salted almonds? I think it just has to be one of life’s simple pleasures.  These nutty morsels are so amazingly simple to make. Oddly, the microwave gets a work out here (I was a little baffled too) but trust me, it works and produces sensational almonds every single time. Toasting, roasting & cooking nuts just prior to enjoying, brings out their natural flavours.

This is perfect ‘Friday afternoon stuff’ so toast your almonds, grab your cold beer and maybe a compadre or two and enjoy for yourself, one of life’s simple pleasures!

MoVida Salted Almonds
Recipe from ‘Movida Spanish Culinary Adventures’ cookery book

200g Almonds (raw and with skin on)
2 teaspoons of salt

Toss the almonds and salt in a ceramic bowl along with 2 tablespoons of water. Cook the almonds in two batches to ensure more even cooking. Cover the almonds with plastic wrap and microwave on high for 2 minutes. Remove the plastic wrap & shake the bowl. Recover the bowl and microwave for 1 minute further. The almonds should be starting to brown in the middle. If not, re-cover with the plastic wrap and again, cook for one minute further. Allow to cool and brush off any excess salt before serving.
