“I’ve chosen this crostata for the demonstration, as it’s a dessert I make again and again throughout the year, simply altering the fruit depending on what’s in season. I also happen to love it…I never tire of the combination of crisp, buttery shortcrust pastry, lightly sweetened fruit, fragrant amaretti biscuits, and ideally, a big scoop of vanilla ice cream!

Of all the things I cook, working with pastry is my most favourite, yet I know many people run for the hills at even the thought of making it! Honestly, once you’ve made a crostata, you’ll never look back. It’s the simplest and most forgiving of all the tarts, and yet to my mind, the best.”
