Sunday’s at our place start with a serve of Grace’s fabulous pancakes. This is her ‘thing’ and the excitement usually starts building Saturday evening when Grace makes the slight mention to her Sister’s that it is ‘Pancake Sunday’ tomorrow. It couldn’t be any sweeter for our middle girl, Ava who has always treasured a sleep in. Ava seems to miraculously awake and sleep walk out to the table just as the last hot pancake hits the platter. Her timing is impeccable. In the photos below, you will see that Ava is suddenly present, when it is time to tuck in – I like her style !

I love watching my kids in the kitchen and yes, they really do walk the talk.

Grace is very ‘in to’ the presentation of her creations lately and if I am not about, she will SMS me a photo of her latest handy work. This always makes me smile & burst with pride but she might have pushed the envelope a little far last Sunday when she text me the most beautiful photo of the pancakes she had just cooked for the family all whilst I was in the middle of a 60km charity walk !! We walked extra fast on Sunday. I think I was running for my supper !

I took these photo’s one beautiful Sunday a couple of months back just to keep for my own special memory collection. It is very special to watch Grace on her Pancake Sunday and how happy the girls all are together just chilling out in the kitchen and around our table. I adore this special start to the day as a family. My girls too have the strong sense that food absolutely brings people together. I am sharing this special recipe and these pics as today is pancake Tuesday. High five’s all round – Pancakes are ready to devour and Ava is finally awake !!!

Classic Pancakes
Serves 4-6

2 eggs
220ml milk
75 grams unsalted butter, melted plus a little to melt in the pan
190g plain flour
½ teaspoon sea salt
1 tablespoon caster sugar
4 teaspoons of baking powder
To serve; maple syrup, your selection of fruit, lemon, sugar…….the choice is yours.

 

In a bowl, beat the eggs with the milk and melted butter and set aside.

In another bowl, sift together the flour with the salt, sugar and baking powder.

Pour the egg mixture into the flour and stir very gently until the wet and dry ingredients are just combined.

Melt a little butter in a small frying pan and pour in approximately 4 tablespoons of the pancake batter. Tilt the pan a little so the batter covers the base of the pan evenly and turn the heat down to medium. Cook until a few bubbles begin to appear on the surface of the pancake and then turn the pancake over to cook the other side.

Cook for 45-60 seconds further or until golden brown on the second side.

Continue with the remaining pancake batter and add more butter to the pan when and if needed.

Serve immediately with your choice of toppings.
