Ava’s Easy Sweet Coconut Slice 

There are some recipes that carry a little more meaning than the ingredients suggest. This easy sweet coconut slice is one of those.

Relish Mama turns 17 this April, and as I’ve been thinking about that milestone this week, I’ve found myself returning to the recipes that have stayed with us. Not the elaborate ones or the ones saved for special occasions, but the ones tied to people, to moments, and to our children growing up.

This slice is one of them.

We’ve always called it “Ava’s slice” at home. She started making it when the girls were quite young, not long after I began Relish Mama. I still have a photo of her in the kitchen one afternoon, making it for her sisters after dance class. She was so happy, quietly getting on with it, knowing how excited they would be when it came out of the oven.

It wasn’t about perfection. It was about making something to share.

Her sisters loved it then, and they still do now.

We don’t make this slice all the time. It’s not one that sits on regular rotation or gets baked every few weeks. It’s more precious than that. It belongs to a particular time, and to a feeling.

I made it again this week.

Ava needed a little extra love, and for some reason, this was the recipe that came to mind. We hadn’t made it for years. As it baked, the smell filled the kitchen in that familiar way, and before long, all three girls were hovering, waiting.

When Ava took her first bite, she paused and said,
“Oh wow… I feel like I am five years old again.”

That stayed with me.

That’s the power of food, isn’t it? It takes you straight back. Not in a big, dramatic way, but quietly. Through flavour, through smell, through something as simple as a slice.

This easy sweet coconut slice is not complicated or showy. It’s certainly not trying to be anything more than it is. It’s soft, gently sweet, filled with chocolate and those pockets of berries that melt slightly into the top. It comes together with pantry staples and very little effort.

But that’s not really why we make it.

We make it because of what it holds.

It’s a reminder of younger years, of siblings sharing something homemade, of the kind of cooking that happens without fuss or expectation. The kind that builds confidence and connection in the kitchen.

It’s also a recipe I chose to recreate and share with our cooking club this month. After 17 years of Relish Mama, I know this to be true — having a handful of recipes you trust makes life easier. Not just for entertaining, but for everyday. The ones you return to when you don’t want to think too hard, but still want something good.

This is one of those recipes.

And while it carries history for us, it’s also incredibly approachable for anyone. It’s flourless, forgiving and simple to prepare, making it a wonderful starting point for younger cooks or anyone wanting to feel more at ease in the kitchen.

It also keeps beautifully, which makes it practical as well as comforting. Something to have on hand, to share, or to return to over a few days.

More often than not, we leave it exactly as Ava first made it. No changes, no additions. It doesn’t need it.

Simple and good.

This easy sweet coconut slice has stayed with us for years, not because it’s the most impressive recipe we have, but because of what it represents.

A moment in time. A small act of care. A memory that still holds.

Equipment

  • 20 x 30 cm baking tray
  • Baking paper
  • Large mixing bowl
  • medium heatproof bowl or small saucepan (for melting butter)
  • Wooden spoon or spatula
  • measuring scales
  • spoon or offset spatula (for pressing and smoothing mixture)

Ingredients

  • 250 g desiccated coconut
  • 200 g caster sugar
  • 120 g butter melted and cooled
  • 2 large eggs lightly beaten
  • 200 g chocolate pieces milk, dark or white — your choice
  • 150 g frozen raspberries or mixed berries

Instructions

  • Preheat the oven to 180°C.
  • Line a baking tray (approx. 20 x 30 cm) with baking paper.
  • Melt the butter in a microwave-safe bowl or saucepan over low heat.
  • In a large bowl, combine the coconut and sugar. Add the melted butter and eggs and stir well to combine.
  • Fold through half of the chocolate. Press the mixture into the lined tray.
  • Scatter over the remaining chocolate and the raspberries, gently pressing them into the surface.
  • Bake for approximately 30 minutes, or until firm and golden on top. Allow to cool in the tin.

Notes

Note — This slice is flourless, so it may feel slightly soft if served on the day, but it firms up beautifully as it cools.
