Asparagus wrapped in Proscuitto

These asparagus wrapped in prosciutto are a beautiful combination. They are so delicious and so simple. Enjoy them at your next barbecue or to posh up your cheese board or as a great canape or party starter. They are also a treat for breakfast with poached or scrambled eggs.⁠

Equipment

  • 1 Frying pan

Ingredients

  • 2 tablespoons olive oil⁠
  • 20 g unsalted butter⁠
  • Asparagus spears⁠ bunch
  • Proscuitto thinly sliced⁠
  • Sea salt flakes ⁠
  • Freshly cracked black pepper⁠
  • A good squeeze of lemon juice⁠

Instructions

  • Snap the dead end of the asparagus away. Cut each asparagus spear in half. ⁠
  • Place the two pieces (from one asparagus spear) side by side and then wrap them with a slice of prosciutto. Depending on the length of your slices, you will likely be able to ⁠
  • cut the prosciutto in half to serve two asparagus spears.⁠
  • Heat a frying pan with olive oil & unsalted butter on medium-high heat. Cook the asparagus & Proscuitto for approximately 1-2 minutes on each side or until the prosciutto is crispy and golden. Transfer to a plate lined with paper towel and season with salt & pepper. Keep at room temperature. ⁠
  • Transfer to a serving platter and squeeze over the fresh lemon juice. Shaved parmesan is also a lovely addition. ⁠

Notes

This can serve as many people as you wish too. Simply increase the quantities.
