These asparagus wrapped in prosciutto are a beautiful combination. They are so delicious and so simple. Enjoy them at your next barbecue or to posh up your cheese board or as a great canape or party starter. They are also a treat for breakfast with poached or scrambled eggs.
Snap the dead end of the asparagus away. Cut each asparagus spear in half.
Place the two pieces (from one asparagus spear) side by side and then wrap them with a slice of prosciutto. Depending on the length of your slices, you will likely be able to
cut the prosciutto in half to serve two asparagus spears.
Heat a frying pan with olive oil & unsalted butter on medium-high heat. Cook the asparagus & Proscuitto for approximately 1-2 minutes on each side or until the prosciutto is crispy and golden. Transfer to a plate lined with paper towel and season with salt & pepper. Keep at room temperature.
Transfer to a serving platter and squeeze over the fresh lemon juice. Shaved parmesan is also a lovely addition.
