Lentil, barley and lemon soup – aka 'Insert expletive here' COVID soup

This is the nourishing soup to make for all the people you desperately want to hug right now but that you have to hug through soup or phone calls instead. This is a hug in a bowl kind-a soup with lentils, barley & finished with lemon and ……..it’s glorious.

Equipment

  • A large saucepan
  • Chopping board
  • Cooks knife
  • Wooden spoon

Ingredients

  • 4 tablespoons of extra virgin olive oil
  • 1 large brown onion finely diced
  • 3 carrots diced
  • 3 celery stalks diced
  • 2 garlic cloves peeled and finely diced or crushed
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • 1 ½ teaspoons of smoked paprika
  • 1 cup of sweet potato diced
  • 1 cup of lentils washed and drained
  • 1 cup of barley washed and drained
  • ½ cup of tomato paste
  • 1 x 400g tin of crushed tomatoes
  • 1 long red chilli split through the centre and bruised gently but left in one piece
  • 2 litres of vegetable or chicken stock
  • Sea salt & freshly cracked black pepper
  • The juice of 1 lemon

Instructions

  • Heat oil in a large saucepan over medium heat.
  • Add the onion, carrot and celery and cook, stirring gently for 5-10 minutes.
  • Add the garlic & cook for 30 seconds, stirring constantly.
  • Add the spices and the sweet potato. Stir.
  • Add the lentils, barley, tomato paste, tomatoes and chilli.
  • Cover with stock and bring to the boil. Turn heat down, and simmer for 30-40 minutes.
  • Season to taste before serving.
  • If the soup becomes too thick, especially after refrigerating, you can always add a little water.

Notes

Don't forget the lemon - it really does work a little magic.
Don't puree it either as the lentils will collapse.
