Just before serving, place the salad and chicken in a large mixing bowl. Shake the dressing to combine and gently toss through the salad to combine and evenly coat. Use sparingly as a little dressing goes along way.
Garnish: Place in your favourite serving bowl and sprinkle with the crispy shallots and peanuts.
Freeze: This dish is not suitable for freezing; it is best enjoyed fresh within 3 days.
Enjoy on its own or place in a French bread roll for a quick makeshift banh mi.
