The name Ricotta is derived from the Italian word recocta that means “recooked”. It is fresh, unripened cow’s milk cheese that has a thick texture with high moisture content. Because of low-salt content and light flavour, it can be perfectly used in sweet or savoury dishes.  For this special cooking class, Rosa will show you all the diversity and functionality of creating the most divine dishes using ricotta cheese.

One of Australia’s most celebrated Italians, Rosa Mitchell is well known for her traditional wholesome Italian food. Rosa is very passionate about seasonality and small producers, as you will see with all the ingredients presented in her class.

There will be no set menu for this class, which we find super exciting. Rosa asks that all guests arrive with their favourite Italian vegetable and please ensure it must be in season. It does not have to be anything fancy but Rosa will then create some very special Italian dishes from these fresh & seasonal ingredients :

    • A stunning legume dish

Kids cook an Italian Family Feast

Back by popular demand!  This is the same class that ran in the September 2019 and January 2020 school holidays.  In this class, led by Caroline Gray, kids will be hand-on creating a wonderful family feast inspired by Italy.  With excellent tips and tricks all throughout the class to demonstrate how versatile the menu and dishes are.
