Today is definitely a day for warm raspberry muffi Today is definitely a day for warm raspberry muffins with white chocolate buttons. 
I adore these muffins. I also love just how many people make them and then actually take a moment out of their day to stop to send a little message to tell me how much they love them also. 
Sweetness in every way 💕.
These simple but beautiful muffins are from my first cookbook but here they are for all to enjoy. Serve them warm, dusted with icing sugar, for extra enjoyment. I hope you love them also. 💛
Raspberry & white chocolate muffins
Makes 12
2 cups (300g)  self-raising flour
200g caster sugar
Pinch of fine sea salt 
⅔ cup good quality white chocolate chips, plus extra for the topping
1 egg
200ml buttermilk
130g unsalted butter, melted
1 teaspoon vanilla extract
1 cup frozen raspberries

Preheat oven to 200°C. Line a 12-hole muffin pan with paper muffin cases. Sift the flour and sugar and salt into a large bowl. Add the chocolate and combine gently. In a separate bowl, combine the egg, buttermilk, melted butter and vanilla extract. Add this to the dry ingredients and gently stir to combine. To ensure you have beautiful, light and fluffy muffins, do not over-stir the mixture, as this works the gluten in the flour and toughens the mixture.
Use an ice cream scoop to evenly spoon the mixture into the prepared cases, top with raspberries and press down gently along with the extra chocolate reserved for topping (a few extra buttons on each muffin is perfect). Cook for 15-18 minutes or until risen and golden in colour. Allow to cool a little in the tin and then transfer to a wire rack
Serve warm, dusted with icing sugar.

Ned on my feet (divine but he's heavy and not seeming to shift at all). A cup of tea in hand and this breakfast to share with you from the first Relish Mama cookbook. 
What a delicious way to start the day. 🍳
Recipe - 
4 large eggs
1 teaspoon of sea salt
Freshly cracked black pepper
2 tablespoons of olive oil
4 spring onions, finely sliced
1 garlic clove, crushed
2-3 medium tomatoes, cut into chunks
1 teaspoon of caster sugar (optional)
1 teaspoon of Aleppo or Szechuan pepper – ground
Salad leaves or watercress, to serve

Whisk the eggs in a bowl with a pinch of salt and freshly cracked black pepper. 
Heat a frying pan over medium-high heat. When hot, add 1 tablespoon of olive oil and then add the eggs. Swirl around the pan for 1 minute. The middle will still be quite runny. Remove eggs from pan & transfer to a plate or bowl. 
Add the garlic and spring onions to the pan and cook, stirring, for 30 seconds. Add the tomatoes to the pan as well as the caster sugar. 
Add the eggs to the pan a little and break up with a wooden spoon, gently, to scramble. Sprinkle with the Aleppo or Szechuan pepper and here’s cheers to you.

What advice would you give your younger self? I What advice would you give your younger self? 

I feel I have so much to share with little Nellie but my top would be:

1. Be sure to keep looking where the light comes in.

2. Never discredit just how far you’ve come.

3. Remember to play, to create & to dream. Saying ’no’ when you need to & setting boundaries will help with this. 

4. We make sense of our lives through the connections that we make. Carve out time for the precious people in your life. And.... be sure to always acknowledge the ones who help you grow. 

5. Adapt, adjust & revise. This one is HUGE. 

6. You will not be for everyone and that is perfectly fine. Your value doesn’t decrease just because someone can’t see your worth.

7. May you always spread kindness into the lives of others. 

8. Don’t ever miss a moment to tell someone that you love what they mean to you. 

9. Never be afraid to use your voice to fight against what is not right. 

10. In the beautiful words of Morgan Harper Nicols, One day, you will look back, and see that, all along you were blooming.

Mettle employs women who are experiencing homelessness due to domestic and family violence. They equip survivors of domestic and family violence with the skills, confidence, and financial security required to secure and maintain employment and in turn, safe and stable housing.

I had my beautiful Ava by my side in the kitchen which made it extra meaningful. It's pretty awesome to 'work' with your own children who are growing up before your eyes & experience their work ethic & incredible strengths - thanks Ave...you were incredible 💕

I called my Mum last night and she sounded so unwell. She does so much for others and I feel she compromises her health. So, Mum, this soup will be for you today. It is your spiced red lentil soup from my first cookbook.
